Cheesy Omelet with salsa
1 whole egg, 2 egg whites, beaten
1 slice grain or wholemeal toast or ½ English muffin
30g avocado
15g tasty cheese
Moroccan Salsa (or anything similar that you fancy)
Small amount of olive oil
Salt, pepper to taste
- Heat olive oil over a low to medium heat.
- Add beaten eggs and cook as an omelet.
- Cook toast, spread with avocado
- When omelet is cooked, fold over twice, and sit on top of toast
- Add cheese, then top with salsa
- Season with salt and pepper to taste
